Merlot

- Grape varietal 100% Merlot
- Tasting notes Aromas of mature and ripe red fruits. A well balanced and structured mouth with a generous and persistent final.
- Pairing recommendation Meat stew, caramelised pork, sauted potatoes, roasted beef, roasted poultry, Asian and spicy dishes such as curries and tikkas
- Winemaking Double grape selection: on the plot and at the winery. The grapes are picked at optimum phenolic ripeness and vinified via a warm pre-fermentation maceration for a part of the wine. Then for the other part of the juice, via a traditional destemming maceration method. Post which, the wine undergoes 2 months of ageing in oak.
- Service temperature 16-18°C
- Soil Multiple geological shades: mainly limestone, clay and sand.

Sauvignon blanc




- Appellation Pays d'Oc
- Grape varietal 100% Sauvignon Blanc
- Tasting notes Pale yellow colour with green hues. Aromas of citrus (lemon, grapefruit) and an aromatic perfume of jasmine and boxwood.
- Pairing recommendation Seafood, white asparagus, smoked salmon, sauted prawns, goat cheese. Great with Asian seafood.
- Service Temperature 8-10°C
- Winemaking process Direct pressing and temperature controlled fermentation. Stirring at the end of the fermentation. Elaborated in steel tank.

Grenache

- Grape varietal 100% Grenache noir
- Tasting notes An elegant nose of red berries. A fresh mouth with a generous and fruity final.
- Pairing recommendation Great as is, or with your appetizers. Perfect with fish, sushi, white meat, a Caesar salad or all your Mediterranean salads.
- Service Temperature 8-10°C
- Winemaking process Direct pressing and temperature controlled fermentation. Stirring at the end of the fermentation. Elaborated in steel tank.

Cabernet Sauvignon




- Appellation Pays d'Oc
- Grape varietal 100% Cabernet Sauvignon
- Tasting notes A dark colour, and purple hues. Notes of mint, red fruits, ripe paprika, as well as smoky and toasted notes. The mouth is full, and balanced with a lot of fruity flavours.
- Pairing recommendation Beef, roasted or in a stew, grilled duck (magret), roasted veal, mushroom based dishes, truffle, goat cheese.
- Service temperature 16-18°C

Pinot noir

- Grape varietal 100% Pinot Noir
- Tasting notes Fresh, elegant with aromas of raspberry and cherry. The wine reveals soft tannins, and a supple mouth.
- Pairing recommendation Beef, Boeuf Bourguignon, roasted poultry, coq au vin, Mushroom based dishes, strong cheese or simply with a platter of cheese.
- Service temperature 16-18°C
- Winemaking process Double grape selection: on the plot and at the winery. The grapes are picked at optimum phenolic ripeness, and vinified via a low temperature pre-fermentation maceration. The extraction is slow, and maceration is short. Then the wine is aged for 2 months in oak.
- Soil Multiple geological shades: mainly limestone, clay and sand.
Le Val Héritage
Chardonnay




- Appellation Pays d'Oc
- Grape varietal 100% Chardonnay
- Tasting notes Bright and dense colour. Notes of pineapple, exotic fruits followed by a soft hint of crème brûlée and roasted nuts. The mouth is generous, full, buttery, yet very fresh.
- Pairing recommendation Foie gras, white fish, white meat, cheese based dishes, or simply a platter of cheese.
- Service temperature 8-10°C
- Winemaking process Direct pressing and temperature controlled fermentation. Stirring at the end of the fermentation. The wine is matured for 2 months in oak.
